What we at MIOKA cherish is an experience beyond just “tea.” We carefully weave the stories held in each tea leaf, creating a time that connects the person brewing, the person drinking, and the countless people who have loved tea from long ago to this very moment.
Though born from the same tea plant, the diverse expressions of Japanese tea truly symbolize the depth of Japanese culture. The delicacy of gyokuro grown under shade, the refreshing vigor of sencha grown under the sun, and the warmth created by roasting hojicha—all have accompanied people with different feelings across different timelines.
A journey of exploration beginning with a single cup
Whether you are new to Japanese tea or have enjoyed it for years, I encourage you to start with the basic brewing method.Use about 8g of tea leaves (approximately 4 teaspoons), about 150cc of hot water at around 80°C, and steep for about 45 seconds.Once you learn this basic principle, you can bring out different expressions from the same tea leaves by adjusting temperature and time.
If you want a stronger flavor at a low temperature, extend the brewing time; if you want a delicious brew at a higher temperature, shorten the time.There is the joy of exploring your perfect cup.
Pour evenly into each teacup using the “circular pouring” method, extracting every last drop.This allows you to brew a delicious second infusion as well. I hope you enjoy the unique flow of time in Japanese tea: savoring the umami in the first brew and the refreshing taste in the second.
