Matcha Latte — hot and iced.
What You Need
| MIOKA matcha (SHINSUI or SENRO) | 2–3 g (a generous teaspoon) |
| Water | 30–40 ml at 70–80℃ |
| Milk, dairy or plant-based | 120–150 ml |
| Sweetener (optional) | Honey, unrefined sugar — about a teaspoon |
* A chasen gives the smoothest result, but a milk frother or a spoon works too.
The First Step Matters

There is essentially one reason a matcha latte turns out gritty: pouring milk straight onto the matcha. Matcha does not dissolve readily into a liquid containing fat, and lumps remain.
Work it into a paste first with a small amount of hot water. That alone transforms the result. Sifting the powder beforehand makes it more certain still.
Hot

STEP 1 Make the paste
Sift 2–3 g of matcha into the cup, add 30–40 ml of water at 70–80℃, and mix until smooth. With a chasen, draw an “M” back and forth for about ten seconds.
STEP 2 Warm the milk
Bring 120–150 ml of milk to around 60℃. Boiling drives off the fragrance of the matcha and takes the sweetness out of the milk. Warm enough to feel comfortable to the touch is about right.
STEP 3 Pour
Pour the warmed milk slowly onto the matcha paste. Foam it first and you'll get a layer of green and white across the surface.
Iced

The method is the same, but the order reverses.
Put ice and cold milk into the glass first, then pour the matcha paste in quietly on top. Done this way, the white and green separate cleanly into layers. Stir before drinking, or take it as it is — either is fine.
* Ice dilutes the drink, so use slightly more matcha (around 3 g) to keep the fragrance present.
